This is Baechu Kimchi, the classic, go-to kimchi made with napa cabbage. While there are many kinds of kimchi in Korea, this is the most familiar and beloved version, often considered the “default.”
Our version follows a traditional Jeolla-do recipe, the heartland of Korean cuisine, full of depth, flavor, and comfort. It just remind me of my ouma’s kimchi.
The original recipe includes traditional Korean fish and shrimp sauce.

This is Pa Kimchi, kimchi made with green onions. Its bold, fresh flavour pairs perfectly with Korean black bean noodles like Jjajangmyun. The balance of spicy seasoning and the crisp bite of the green onion makes it a true favourite.
Feeling lazy? Chop it up, add a fried egg and a drizzle of Korean sesame oil, and mix it with warm rice. Simple, comforting, and absolutely delicious.
